Ingredients

  1. 1/2 kgBeef Mince
  2. 4 sliceBacon
  3. 1 kgWashed Potatoes
  4. 1/4 kgFrozen Mixed Vegetables
  5. 1 mediumBrown Onion (Finely chopped)
  6. 2 1/4 tspBush Spice
  7. 4 largeEggs

    Dice the potatoes into roughly 1cm cubes. (I prefer to leave the peel on as it adds to flavour)

  2. 2

    Remove rind and dice bacon

  3. 3

    Place potatoes and 1/4 teaspoon of spice into hot pan with a generous layer of oil. Keep turning over occasionally throughout the cook process to cook the potato evenly. If any potato sticks to the pan scrape and mix in its part of the recipie.

    In a second pan fry the meat of choice, adding the onion and spice when the meat is 3 quarters cooked. (The meat will cook faster than the potato so when done just turn off heat and leave in pan temporarily)

    Place the frozen Veges into a strainer and run under hot water for a minute or two to initially defrost and remove any ice. Let stand to drain.

    Break the eggs into a bowl and using afork break and mix the yokes in slightly (Dont beat!)

    When potatoes are cooked and soft to bite, add the meat and vegetables and mix thoroughly.

  8. 8

    Finally add the mixed eggs and turn entire mix over until everything is coated in egg, continue cooking until egg is fully cooked.

    Serve hot in bowls and add Tomato Sauce or Ketchup to taste.

    **NOTES**
    Most of this meal is fully optional, the only core components are the potatoes, onion and eggs. The meat is optional and any red meat can be used, just be sure to dice it about the same size as the potato and fry in a seperate pan. The vegetables used are agin optional to taste, if using fresh veges be sure to preboil and drain them before starting the rest of the meal. For the spice I use masterfoods Bush Spice but again you can use any of your preferred spices or herbs, I have even thrown a touch of Chilli powder in to give it some bite.
