Steps

Wisk eggs and coconut milk well in a large bowl.

Add salt and pepper to taste.

Preheat oven to 350 F.

Place all other ingredients in frying pan withhe exception of the coconut oil.

Fry at medium heat till bacon is done.

Grease muffin pan with coconut oil.

Pour fried ingredients into egg mixture and stir well.

Using a ladle to pour mixture into the muffin pan.

Bake for 20-25 minutes until turning golden brown.

Remove from muffin pan immediately and let cool.

Refridgerate for up to 4 days.

Warm muffins in microwave for 20-30 seconds.
