Crispy Vegetable Potstickers with Lacy Skirt
Use whatever you have in the fridge! As long as the filling is homemade, anything goes.

Prepare the potsticker wrappers: Knead the hot water dough until smooth and elastic, then place it in a plastic bag to rest for 15 minutes. (While waiting, prepare the filling.)

Prepare the filling: Toss the zucchini with salt (do not rinse off). Finely chop all the filling ingredients and seasonings, mix well, and squeeze out excess moisture.

Divide the dough into 4 portions, then roll each into a long rope. (Keep unused portions in a plastic bag to prevent drying out.)

Cut each rope into small pieces, about 2/5 ounce (10 grams) each, using a kitchen scale if available. Dust your work surface with flour.

With the cut side facing up, press each small dough piece into a flat round disc with your hand.

Use a rolling pin to roll each disc into a round wrapper, dusting with flour as needed.

Assemble the potstickers: Place the filling in the center of each wrapper in a log shape. Fold and seal the top half, then place on the work surface. Gently pull the ends outward and press down to create a plump, attractive shape.

Pan-fry the potstickers: Heat 1 tablespoon oil in a nonstick skillet over medium-high heat. Arrange the potstickers closely together in the pan. Pour in the flour slurry, cover with a lid, and cook over medium-low heat until the bottom forms a golden, crispy lacy skirt. Turn off the heat.

Place a plate over the skillet and invert to serve the potstickers with the crispy side up. Enjoy!
