A healthy Mediterranean dish. Great for dipping fresh bread or vegetable sticks. Can also be added to pitta for the perfect Gyros

Peel the cucumber

Use a spoon to de-seed the cucumber halves
- 3
Grate the cucumber into a sieve
- 4
Add a teaspoon of salt to the cucumber and mix well -this will drain excess water from the cucumber. Leave to stand over a bowl while you make the dip

Crush 3 garlic cloves

Chop a handful of fresh mint leaves
- 7
Add the yoghurt to a bowl along with the garlic and mint

Add the lemon juice and olive oil
- 9
By now the cucumber is well drained and can be added to mixture. Season with pepper and mix well

Serve with fresh bread
