Lime and Cream Cheese Carlota

Juice the limes and remove the seeds.

Pour the lime juice into a blender.

Add the evaporated milk and sweetened condensed milk.

Add the cream cheese (cut it into pieces to make blending easier).

Add the gelatin. (The amount listed is what I use, just to give a hint of color. You can add more if you want, but the goal is to keep the natural lime flavor and not make it too artificial.)

Blend until smooth.

Place a layer of cookies on the bottom of a baking dish or mold, then pour some of the mixture over the cookies.

Continue layering cookies and the mixture, alternating, until you use everything.

Crush a couple of cookies and sprinkle on top to decorate. You can also use lime zest or fruit like strawberries or blueberries. Refrigerate for about 2 hours.

Note: If you want to add peaches or pecans, you can layer them between the cookies and mixture, or just use them on top for decoration.
