Ingredients

  1. 1 lblean ground beef
  2. 6 ozbeef chorizo
  3. 1/4 cupcrushed tortilla chips
  4. 4 ozdiced tomatoes drained
  5. 2 tbsChile de Arbol paste (or 4 ounces of your favorite minced chili pepper)
  6. 2 tbsdried minced onion
  7. 3 tspminced garlic
  8. 1 tspground cumin
  9. 1 tspWorcestershire Sauce
  10. 1/2 tspdried cilantro
  11. 1egg
  12. 1/2 tspsalt
  13. 1/2 tspBlack Pepper
  14. For the sauce
  15. 1/3 cupred or green enchilada sauce
  16. 1/3 cupbrown sugar

Cooking Instructions

    Line your slow cooker with foil and spray with cooking spray.

  2. 2

    Combine all ingredients in a large bowl until well blended.

  3. 3

    Form meat mixture into a loaf.

  4. 4

    Set slow cooker on low heat for four hours.

  5. 5

    In a small sauce pan, heat sauce and brown sugar until sugar is dissolved.

    After three hours, baste the meat loaf with the sauce mixture and continue to cook. Use remaining sauce and top if desired when meatloaf is ready to serve.
