Heat oil in a large wok or skillet over medium-high heat. Cook the onions in hot wok, stirring continually for 3 minutes until golden brown.

Add in the ginger and garlic in skillet and stir for about 1 minute. Add soy sauce,, salt, and spices to the ginger and garlic; add 2 tablespoons of water and bring to a boil, reduce heat to medium, and continue to cook another 2 minutes for the spices to cook.

Crumble cold rice into the wok. Stir the rice with a wooden spoon, breaking rice into individual grains as it warms; add in tomatoes,carrots,courgette and capsicum.Other vegetables you can add (peas, eggplant, broccoli,)Cook and stir mixture until the vegetables are tender, 5 to 7minutes.

Add in the green Onions to garnish.
