Ingredients

  1. 2 cupsprecooked rice
  2. 2 tablespoonsvegetable oil
  3. 1 teaspooncrushed ginger
  4. 1 clovecrushed garlic
  5. 2large diced carrots
  6. 1large onion
  7. 2tomatoes diced
  8. 1large capsicum diced
  9. 1courgette sliced
  10. Salt and preffered spices (garahm masala, curry powder, cayenne)
  11. Soy sauce
  12. Green onion(leeks)

Steps

  1. 1

    Heat oil in a large wok or skillet over medium-high heat. Cook the onions in hot wok, stirring continually for 3 minutes until golden brown.

    Add in the ginger and garlic in skillet and stir for about 1 minute. Add soy sauce,, salt, and spices to the ginger and garlic; add 2 tablespoons of water and bring to a boil, reduce heat to medium, and continue to cook another 2 minutes for the spices to cook.

    Crumble cold rice into the wok. Stir the rice with a wooden spoon, breaking rice into individual grains as it warms; add in tomatoes,carrots,courgette and capsicum.Other vegetables you can add (peas, eggplant, broccoli,)Cook and stir mixture until the vegetables are tender, 5 to 7minutes.

    Add in the green Onions to garnish.

    Serve and enjoy.
