Ingredients

  1. 250 gmsBoneless diced chicken
  2. 4 tspKafir Lime juice
  3. 1Rind of Kafir Lime
  4. as requiredKafir Lime leaves
  5. 2Diced onions
  6. 1-2Split green chillies
  7. 4-5Coarsely chopped garlic
  8. 100 mlCoconut milk
  9. to tasteSalt
  10. to tasteSugar
  11. 1 "Thinly sliced ginger
  12. 2 tbspApple Cider vinegar
  13. 1 cupBasmati rice
  14. as requiredCooking oil

Steps

  1. 1

    First we need to pickle the ginger. Soak the ginger in a mixture of apple cidar vinegar and salt

  2. 2

    Marinate chicken with half Kafir Lime juice

  3. 3

    Cook the rice with oil and Kafir Lime leaves

  4. 4

    Add oil in pan, add garlic, chillies, diced onions, pickled ginger.

  5. 5

    Fry till onions are translucent. Add chicken and fry till half cooked. Add half lime juice and rind.

  6. 6

    Add coconut milk, adjust with water. Bring to a boil.

  7. 7

    Adjust seasoning. Switch off the heat and give it a standing time of 5 minutes.

  8. 8

    Garnish with a wedge of Kafir Lime.
