Pumpkin Fritters (Buñuelos de Calabaza)

Place the peeled and diced pumpkin in a pot with water and boil for about 10 minutes.

Once cooked and well drained, transfer the pumpkin to a bowl and mash it with a fork.

Add the remaining ingredients—sugar, baking powder, flour, and egg—and mix well.

Once everything is well combined, let the mixture cool for about 15 minutes.

Pour sunflower oil into a skillet and add a piece of lemon peel. When the peel starts to bubble, remove it from the skillet.

Using two tablespoons, drop portions of the batter into the skillet. Lower the heat to medium and fry until golden brown and cooked through.

Once golden, remove the fritters and place them on a plate lined with paper towels to drain excess oil.

In a bowl, mix ground cinnamon and sugar. Roll the fritters in the mixture to coat them.
