Ingredients

  1. 1 cupall-purpose flour (about 120 grams)
  2. 2 cupsfine semolina flour (about 320 grams)
  3. 1 cupcoarse semolina (about 160 grams)
  4. 1 cupvegetable oil (about 240 ml)
  5. 2 cupssugar (about 400 grams)
  6. 1 3/4 cupshot water (about 415 ml)
  7. 1/2 cuplemon juice (about 120 ml)
  8. 1 tablespoonturmeric
  9. 2 tablespoonsbaking powder
  10. 1 tablespoonkaak spice mix for desserts
  11. Zest of 1 lemon
  12. 4 tablespoonsmilk (about 60 ml)

Steps

  1. 1

    In a bowl, mix the dry ingredients except for the baking powder.

  2. 2

    In a separate bowl, combine the hot water, sugar, oil, lemon juice, and lemon zest.

  3. 3

    Add the wet ingredients to the dry ingredients and stir. Let the batter rest for 1 hour.

  4. 4

    Add the baking powder to the mixture, stir, then bake in the oven at 350°F (180°C) for 35 minutes. Broil briefly to brown the top.
