Cut the matumbo into pieces and then wash with running water, make sure it's clean

Let it cook in a sauce pan for some hours for it to cook well

Let it dry and then fry it in a low heat, add some little oil,salt and then let it brown

Add the diced onion and mix in well

Let the onions sweat and then add tomatoes and let it cook mean while you can add the red pepper optional

Cover with a lid and let it cook and simmer under low heat

Correct the seasoning and then serve it with either ugali or rice
