Jollof Rice, Chicken and Salad

Blend and boil the fresh tomatoes and pepper.

Parboil and wash the rice. Keep aside.

Pour groundnut oil in a dry pot. Place on heat. Add the chopped onions. Add the boiled pepper and tomatoes. Allow to boil. Add the tin tomatoes, jollof rice spice, ginger, garlic. Allow to boil properly.

Add the parboiled rice. Stir and mix properly. Add boiling water so the rice can cook. Add salt, cubes. Allow to boil

Chop the vegetables (carrots, green peas, green pepper). Add to the well cooked rice. Stir and allow the heat to cook the veggies.

Add mayonnaise to the slices veggies for salad and mix properly

Serve the Jollof rice with the salad and grilled chicken.
