Take flour, semolina and gram flour in a big mixing bowl and add salt, baking soda and ghee Mix everything really well.

Now add water as required and knead the dough. Don’t knead the dough too much. Cover and keep aside for half an hour to set.

Heat some oil in a wok or pan and add cumin seeds first. Then add asafoetida, Fennel seeds, ginger, green chilli, turmeric powder, coriander powder and peas. Saute for 2 minutes until the peas get little soft.

Then add salt, mango powder, red chilli powder. Mix everything really well. Stuffing is now ready.

Grease your hands with some ghee and knead the dough again. Then divide the dough equal portions.

Now flatten the baati and stuff one portion of the stuffing we made, and again flatten them using your palms. Prepare all the baatis.

Now preheat oven at 200 degree centigrade and place the baking tray over the middle rack. Bake for 10 to 15 minutes.

Continue baking until the baatis get golden brown in colour. Stuffed baatis are ready.

Dip hot baatis in ghee and place them on a serving bowl. Ready to eat.
