Peel the skin of bittergaurd.

Cut the both end of bittrgaurd and scoop of the inner flesh and seeds.

Cut the 5 mm sized of rings like shape of bittergaurd.

Marinate with ample amount kf salt and leave for about 4-5 hrs or overnight.

Give the good wash and boil in water,vinegar and sugar

Remove the water and boil again with water,vinegar and sugar

For the sauce

In a saucepan boil jagerry,tamrind,degi mirch,cumin powder and salt.

Boil untill jageery and tamrind completely dissolved.

Heat a saucepan,add curry leaves and tomato puree.

Then add tamrind liquid and cook for about 15-20 minutes.

Heat oil for frying the bittergaurd

Dust some cornflour on butergaurd and fry untill crisp.

Another saucepan add 2-3 spoons of sauce and stirr fry.

Sprinkle some amranth for garnish
