For the dough: In a bowl, dissolve the yeast and sugar in 1/3 cup warm water (100 ml) and let sit for 5 minutes.

In a stand mixer bowl, add the flour, butter, salt, and the yeast mixture, and start kneading.

While kneading, gradually add the remaining water and knead until the dough becomes elastic.

Score the dough with a knife, cover with a towel, and let it rest in a warm place for 1 hour.

For the filling: Divide the dough into 6 equal balls and roll each out with a rolling pin.

Spread tahini over each, sprinkle with sugar and cinnamon, and roll up loosely into a spiral shape.

Brush the pies with melted butter and a little tahini, then sprinkle with sugar and cinnamon.

Bake in a preheated oven at 350°F (180°C) for about 20-25 minutes.

If you prefer a dairy-free version, use sunflower oil instead of butter.
