Thai noodle soup

My girlfriend made this dish for me and it blew me away. It uses a few basic asian ingredients and is really simple to make. Plus it’s ridiculously tasty. I would compare the taste to Pho but with a much, much shorter cook time!

Notice how I haven’t given quantities for the fillings, this is because it’s entirely up to you how much you add! The only essential filling is the coriander/spring onion mix as it contributes a lot to the taste. The soup is so delicious you can just have it by itself with the pork meatballs!

Ingredients

  1. Soup
  2. 1 lpork stock
  3. 1Staranise
  4. 1 tbspoyster sauce
  5. 1 tbspsoy sauce
  6. 1 tspfish sauce
  7. 1 1/2 tspsugar
  8. To tastesalt
  9. Pork bones
  10. Pork chop (thinly sliced) or beef
  11. Fillings
  12. Dried rice noodles
  13. Bea sprouts
  14. Frozen asian style pork meatballs
  15. Boy Choy
  16. Chopped green onion
  17. Chopped fresh coriander

Steps

  1. 1

    Put the pork stock into a large pot and bring to a boil. Then dump all the liquid soup ingredients in and mix. Then add the rest. Simmer for 1.5 hours. After 1 hour, check the pork chops and if fully cooked and tender, set aside.

    Taste the soup and add salt to taste. If the flavor is not intense enough, continue boiling for another 20 minutes. Bring a small pot of water to cook the fillings. Add to meatballs to the soup so they can defrost properly.

    Boil the rice noodles for the required time on the packet and set aside in your serving bowl. Boil the the bok choy and bean sprouts (around 2 minutes, then add to the noodles.

    Pour 1-2 cups soup into the serving bowl with the noodles, and add however many meatballs and pork chops. Garnish with the coriander and spring onions. Can add Thai Chilli Oil if you like some chilli.
