  1. 1 kgdates, seeds removed
  2. 3 cupsflour, sieved
  3. 1 cupbutter
  4. 2 tablespoonsground cardamom
  5. 2 tablespoonssesame grains, grilled
  6. 1 tablespoonground aniseed
  7. To Garnish:
  8. almonds grilled
  9. pistachios coarsely ground

    Place the dates in a mixing bowl and blend until you have homogeneous date dough. Transfer the dough to a large bowl.

  2. 2

    In a pan, heat the flour over low heat for 2 minutes while stirring constantly.

  3. 3

    Gradually add the butter to the date dough and then the flour. Knead the dough until you have a crumbled mixture, like bread crumbs.

  4. 4

    Add in the sesame grains, cardamom and aniseed and knead again.

  5. 5

    Roll out the dough over a serving plate and allow to cool.

  6. 6

    To serve, garnish with almonds and pistachios. It is served cold.

Tasty. I used fresh Iranian dates which are soft, brown rice flour to be gluten free, sweet butter (unsalted), freshly ground cardamom & aniseed. I toasted the sesame seeds and sliced blanched almonds in a dry pan & also garnished with the coarsely ground pistachios.
