Ingredients

  1. 1 1/2 cupscooked lentils
  2. 1 1/2 cupscooked kidney beans
  3. 1 1/2 cupsmarinara sauce
  4. 1/2yellow onion, finely chopped
  5. 2-3 clovesgarlic, minced
  6. 1red or green bell pepper, chopped
  7. 1carrot, diced
  8. 1 cupmushrooms, finely chopped
  9. 1/2 cupsun-dried tomatoes, chopped
  10. 2jalapeños, chopped
  11. 1 tablespoonsriracha sauce (optional)
  12. 1 splashwhite wine
  13. 2 tablespoonsbarbecue sauce
  14. 1 tablespoonapple cider vinegar
  15. 1 teaspoonsmoked sweet paprika
  16. 1 teaspoonmustard powder
  17. 1 tablespoonground cumin
  18. Bread for sandwiches
  19. Olive oil
  20. Cayenne pepper flakes to taste
  21. Salt and freshly ground pepper

    Sauté the vegetables and prepare the legumes. Bring the lentils to a boil in salted water and cook for 15-20 minutes or until tender. The beans should be boiled a couple of hours earlier or the day before. For the vegetables, heat a teaspoon of olive oil in a pan and sauté the onion, jalapeño, garlic, bell pepper, and carrots until the onion becomes translucent. At this point, add the sun-dried tomatoes and mushrooms, sauté for a couple of minutes, add a splash of white wine, and continue cooking until it evaporates.

    Add flavor to the dish by adding the tablespoon of sriracha sauce, the two tablespoons of barbecue sauce, mix well, and cook for a couple of minutes to integrate all the flavors. Next, add the cup and a half of tomato, cayenne pepper flakes to taste, and a tablespoon of apple cider vinegar, mix well, and finally, add the lentils and beans. Mix again and cook for a few minutes to blend all the flavors well. Turn off the heat.
