My kids love eating waffles. Even you might be tempted to try one if you pass by a shop or street vendor making these, with the delicious aroma of pandan leaves and coconut filling the air.

In a mixing bowl, combine the coconut water, whole milk, eggs, and sugar. Mix well. Add the pandan extract and stir to combine. Sift in the self-rising flour and tapioca starch, then mix until smooth. Let the batter rest for 15 minutes before cooking. Do not overfill the waffle iron, as the batter will expand. Cook for about 3 minutes, or until the waffle maker indicates they are done. Gently remove the waffles.

Let the waffles cool, then store them in an airtight container to enjoy later.
