Ingredients

4 servings
  1. 4large steak mushrooms
  2. 1small white onion or 1/2 large onion
  3. 2-3minced garlic cloves
  4. 150 gbaby spinach
  5. 1 slicefeta
  6. Origanum
  7. Splasholive oil
  8. Grated parmesan & mozzarella or cheddar
  9. Optional: 6 pieces sundried tomatoes, pepper or olives (chopped)

Steps

  1. 1

    Preheat oven to 180 degrees Celsius

  2. 2

    Remove stalks using a spoon or knife from mushrooms and cut up the stalk

  3. 3

    Finely chop onion, and add garlic to saute in olive oil for 3 minutes or until onions become slightly translucent. Add the cut up mushroom stalks

  4. 4

    Roughly chop rinsed spinach and add to pan. Place lid on pan. Stir occasionally. Season with oreganum and pepper

  5. 5

    Once spinach is cooked, remove from heat. Crumb the feta into the mixture (add olives/ sundried tomatoes - optional)

  6. 6

    Place mushrooms on an oven tray and cook for about 5 - 7 minutes or until the mushroom sweats and there is liquid inside the mushroom

  7. 7

    Remove mushrooms from oven and drain liquid from mushrooms

  8. 8

    Fill mushrooms with spinach feta mixture and add grated cheese on top

  9. 9

    Bake till cheese slightly browns
