Ingredients

  • 1 cupall purpose flour/maida
  • 1/2 tspbaking powder
  • 1 pinchbaking soda
  • 8 tbspcondensed milk
  • 8 tbsp mango pulp(I used alphanso pulp)
  • 4 tbsp melted butter
  • 7-8 dropsvanilla essence
  • for icing:
  • as requiredWhipped cream
  • as requiredMango slices and mango balls as required
  • fewmint leaves

Steps

    Sieve the flour, baking powder and baking soda in a bowl. Keep aside

  2. 2

    Combine the condensed milk, mango pulp, melted butter and vanilla essence in another bowl. Mix well.

  3. 3

    Add the flour mixture little at a time to the wet mixture and mix gently using a wooden spoon or spatula.

  4. 4

    Add some water if required(about 2 tbsp), to get a batter of dropping consistency.

  5. 5

    Pour about 1 tbsp of mixture into each muffin liner dusted by some flour, placed in a muffin tray.Tap a little and bake in a preheated oven at 180°C for 20-25 minutes.Take out and cool the cup cakes.

    Alternatively you can microwave it by placing in silicon moulds and microwave on micro medium for 7 minutes and on micro high for 2 minutes. Cool

  7. 7

    Decorate the cooled cup cakes with whipped cream, mango slices, mango balls and mint leaves, or as desired. Enjoy!!
