Peel arbi, wash it thoroughly and cut into rounds or as finger fries, as you wish.

Take oil in a hot pan on medium flame and add cumin. Once the cumin started changing colour, add dry spices (except amchoor) mix quickly and add your arbi pieces and mix well.

Lower the flame, cover the pan and cook till the arbi is completely cooked and starts getting crispy (approx 15-20 mins). Now when the veggie is completely done add amchoor powder and fresh coriander leaves, mix well and serve.
