    Buckwheat & chickpea curry

    uncooked bulgur wheat • chickpeas drained and rinsed • large tomatoes chopped or 1 can of tomatoes • onion chopped • low sodium chicken stock or vegetable stock (organic, if vegan) • garlic minced • curry powder 1 tsp cumin powder 1 • cooking oil, salt and pepper • finely chopped cilantro/ coriander • roma tomato seeded and sliced (optional for garnish) • mozzarella cheese
