Delicious Emily, thank you for this lovely recipe - it was sooo yummy! I make a similar soup - it’s thicker with a plant milk base (I know it’s cheating 😉) - it’s very quick - I’ll share when I make it. Have you made tomato gazpacho this year yet?

Thank you Emily, it was soo good! I love gazpacho’s - particularly when it’s too hot to be bothered to cook or I’m trying to drop a dress size! My version doesn’t have bread (for this reason!).
