I didn't have Coconut extract so I toasted some coconut and put it in the frosting. When it was done it was a bit dense for me so I folded in some cool whip! The cake is still in the oven.. I did a box lemon cake with orange juice instead of water. I guess I was going for a tropical citrus flavor.
