
Very good recipe! I tweaked it to my liking by seasoning the fish with Adobo(Goya) seasoning, paprika, garlic powder and onion powder. Then I added the same seasonings along with cilantro, dill and basil to the potato mixture as it was cooking. I cooked the fish in the skillet for 3 mins a side, then put the fish in a square dish and topped with more paprika, dill and basil. I poured the potato mixture over the fish, then poured the sauce on top. I then covered the dish and baked it in the oven for a few minutes. Served over brown rice with a salad on the side!!

I cut up four or five small potatoes and also added minced garlic. I subbed red, orange and yellow peppers for the banana peppers too.
