tried this tonight with few minor changes to suit my taste. for the stuffing I mixed chicken with flour, chicken salt, bread crumbs, cornflake crumbs & egg. Then I stir fried the chicken with a little bit olive oil until the chicken half cook. for the eggplant I skip the boiled part just seasoning it with salt and pepper then put the chicken stuffing on the eggplant and baked it for 30 minutes on 180°c fan force.
for the sauce I use cheese & mushroom sauce instead.
