Ingredients

4 servings
  1. Filling
  2. 2 largeEggplants
  3. 1 largeOnion
  4. 1/2Red Pepper
  5. 1/2Green Pepper
  6. 200 gramsChicken or Ground Beef
  7. 1Salt, Pepper and Oregano
  8. White Sauce
  9. 1 cupMilk
  10. 2 tbspFlour
  11. 1 tbspButter
  12. 1Nutmeg, Salt and Pepper

Cooking Instructions

    Cut along the eggplant and hollow the inside, leaving a margin.

    Boil shells until soft.

  3. 3

    Cut onion, peppers,inside of eggplants and chicken in dices.

  4. 4

    Put onions and peppers in a skillet over medium heat until tender.

  5. 5

    Add chicken and eggplant. Cook until they change colour and season it.

  6. 6

    For the white sauce; melt butter in a skillet.

  7. 7

    Add flour, until brown

  8. 8

    Put in milk and season it. Mix until it gets thicker

  9. 9

    Place the filling into the eggplant shells, and cover with white sauce. (Melt cheese on top if you want)

After reading the reviews I decided to tweak this recipe out a bit. I used chx but I also added fresh asparagus, baby Bella shrooms, butter, garlic, basil, & soy sauce. Since I don't care for bell peppers I only used 1/3 of an orange colored one and 1/3 of a yellow one and stuffed the other 2/3s and fed it to others. I also gave the sauce some taste with salt pepper Heineken dark brew, shoyu, & cayenne pepper. My bf doesn't care for eggplant but he said it actually tasted good! So very good base to work off of! Thanks!
