- Love making curry and no better way than making your own curry Paste . So this is one i use often .

- 6 medium red onions
- 6 small dried bay leaves
- 1 cup good beer of your choice .

- 1 tsp cumin seeds
- 12 black pepper corns
- 1/4 tsp paprika

- 1 tbsp dried flat leaf parsley
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried sage
- 1 tsp onion power
- 1 tsp garlic powder

- 400 grams Pork fillet or lamb backstrap .
- 1 tbsp smoked paprika
- 2 oranges - segmented
- 1 red onion - sliced
- 1 red capsicum - sliced
- 4 cup baby spiniah leaves
- 1 zest of 1 finely grated orange
- 1 juice of 1 orange
- 2 tbsp red wine vinegar

- 1 red onion - finely diced

- 1 piece ginger - about 20cm piece - finely diced or grated
- 1 pints root tumric - grated
- 6 -8 red chilies - finely diced
- 1 stalk lemon grass - white bit only - finely diced
- 2 tbsp malasian curry powder
- 1 tbsp shrimp paste
- 2 tbsp salt

- 180 ml olive oil, extra virgin
- 1 bunch basil , or herb of your choice .
- 200 ml clean , dry , sterilised glass jar , jug or bottle with a air tight lid to seal , cork works best .

- 2 tbsp water
- 2 tbsp glucose syrup
- 2 tsp glycerine
- 500 grams pure icing sugar (royal icing) (confectioners) sugar

- 1/4 cup good BBQ sauce
- 1 tsp cider vinegar
