I love to bake and make up new exciting recipes to cook for my soon to be husband as much as I can.

- This recipe has been in my family for over 30 years. My mother loved it so much that she had requested it from a friend of hers back in the 70's and she has been making it for our family ever since, and everyone that has tried it just loves it!! The recipe can be doubled and out into an 8x10 glass baking dish.

- 1 tub cool whip, thawed (extra creamy or regular, it doesn't matter which.)
- 1 deep dish crust- I recommend a pastry crust (pre-baked), but can also use a graham cracker crust.
- 2 cups cold milk (whole or 2% is recommended, just NOT skim)
- 2 pkgs (3 1/2 oz. each) instant pudding or pudding pie mix. It calls for vanilla, but I think french vanilla or white chocolate or a combo of each tastes better.
- 1 cup pumpkin puree
- 1 tsp pumpkin pie spice

- This roast was very good. Since my roast was 4lbs I added an extra cup of broth with the left over flour half way through the cooking time. I also added a couple bay leaves and a pinch of oregano. And since my husband doesn't like celery I substituted it for some mixed seasoning that had celery seeds in it to give it that extra flavor. My husband loved it and this was my first roast.
