My local Italian restaurant has a dish called Calamaretti, an Italian sausage meat pasta dish with a light cream sauce and pasta shaped like calamari rings. I always love to try new food but in this restaurant, I have the same meal every time I go! During lockdown I tried and tried to recreate this dish and this is the closest I've managed to get... so far

1. Butter
2. 1 White Onion
3. 2 Carrots
4. 1 bunch Thyme
5. 2 Whole Lobsters
6. 3 pinch Cayenne Pepper
7. 3 tbsp Tomato purée
8. 200 ml White wine
9. 100 ml Brandy
