yea if you read most everyone simmers for bout 2- 3 hours depending on heat and elevation and humidity I guess I did mine the other day for 2.5 hours was still good just go with how u feel u think it should be that's the fun thing bout cooking u can experiment and create an all new creation with a simple twist and adjustment (tu)
