Hi, my name is Ivana, I live in Slovakia in the middle of Europe. Slovak cuisine is very specific- our traditional meal is "bryndzové halušky".It´s a kind of dumplings (from flour, grated potatos and water) with salty sheep curd and fried bacon. Very popular are baked meat (pork, goose, duck), cabbage specialities, „lokše“ (fried flatbread) or „trdelník“ (sweet pastry cylinders backed on wooden stick). I had to give up all those delicacies after I was diagnosed histamine intolerance. What does histamin intolerance simply means? It is important to eat foods that are low in histamine levels. Already half a year I follow a strict diet and I feel much better. No more gastric problems, headaches and weakness. Most of the recipes that I will gradually add will therefore low-histamine, gluten-free or lactose-free. I believe that you'll love them as I do ☺
