- Virgin mojito has always been my favorite drink, of course a non-alcoholic one.For me it’s a NEVER SAY No to Virgin Mojito coz its very refreshing, not only in summers but any time throughout the year. Aromatic ginger and mint, tangy lemon with lots of ice and soda. But for a change, I gave it a twist using fresh beetroot juice, added some apple cider vinegar and replaced sugar syrup with honey for healthier option. Believe me, it turned out amazing and was completely consumed in no time. Not only its taste but also its color was bright and attractive. Dried pomegranate seeds are used in many Mughlai and other cuisinesPomegranate is my son’s one of the favorite fruit. He loves to have it in any form, so thought to give it a different avatar. So made this pomegranate mousse which was ready in minimum time and was over in no time. It had tanginess of lemon, sweetness, color and goodness of pomegranate juice. For the base of mousse cake I have used here chocolate sponge as chocolates and chocolate cakes are kids all time favorite.You can use vanilla sponges or digestive biscuits as a baseHere’s the recipe of my pomegranate mousse cake, a very yummy, easy to make dessert which will definitely be loved by all.

- 500 gms Prawns (jumbo) (cleaned and deveined, tail intact)
- 2 Kiwis (slightly under riped) sliced or cubed
- 1 Leek sliced
- ½ cup Bell peppers (cut in juliennes)
