Ingredients

  1. 500 gmboneless chicken
  2. 3 tbspginger garlic paste
  3. 1 tbspcoriander powder
  4. 1 tspgaram masala powder
  5. 3 tbspcurd
  6. 1 tspturmeric powder
  7. 1 tbspred chilli powder
  8. 2 cupssoaked basmati rice
  9. 2-3bay leaves
  10. 2cinnamon sticks
  11. 5-6green cardamom
  12. 3-4black cardamom
  13. 2 tbspghee
  14. 3 tbspoil
  15. 3 tbspberesta (fried onion)
  16. 1onion chopped
  17. 2 tbspmint leaves
  18. as requiredSalt to taste
  19. 2 tbspsaffron soaked in milk

Cooking Instructions

    Making Rice -
    Make rice by adding whole garam masala, bay leaves, salt, oil and soaked rice in boiled water and cook till rice is 80% cooked, then strain and spread in a flat plate, and keep aside.

    Marinate Chicken -
    Take a bowl add boneless chicken pieces, ginger garlic paste, curd, coriander powder, garam masala powder, turmeric powder, red chilli powder and mix it well and marinate for 30 minutes.

    Heat oil and ghee in a kadai add all whole garam masala, bay leaves and saute few seconds then add chopped onion and fry them on low flame. Then add marinated chicken, salt and mix it well, cover and cook on low flame, till the chicken pieces are allmost cooked.

    When chicken pieces cooked and oil leaves in surface and bubbles are seen then turn off the flame. Chicken is ready.

    For Assembling Chicken Biryani -
    Make two layers of biryani on this, first add chicken pieces layer and little gravy, then add one layer of cooked rice, mint leaves, fried onions. Then repeat another layer of chicken and last add rice layer,mint leaves, fried onions and finish it with saffron milk. And cover and cook on low flame for 5-8 minutes.

    Chicken Biryani is ready to serve.
