Ingredients

  1. For marination
  2. 1 kgmutton
  3. 250 gmcurd
  4. 2 tbspsginger garlic paste
  5. 1/2 tspturmeric powder
  6. 1 tbspsred chilli powder
  7. 1 tspgreen cardamom powder
  8. 2black cardamom
  9. 6cloves
  10. 4 piecescinnamon
  11. 1 tspshahjeera
  12. 1 tspgaram masala powder
  13. 1/2 tbspssalt
  14. 3medium fried onion
  15. 1/2 cupchopped coriander leaves
  16. 1/2 cupchopped mint leaves
  17. 4green chillies
  18. 2 tbspsghee
  19. For cooking rice and dum
  20. 750 gmbasmati rice
  21. 1/2 tspshahjeera
  22. 2bay leaves
  23. 3green cardamom
  24. 1black cardamom
  25. 3cinnamon
  26. to tasteSalt
  27. 2medium size fried onion
  28. Few saffron strand soaked in hot water
  29. 1/2 cupfinely chopped coriander leaves
  30. 1 tbspsghee

Cooking Instructions

    Soak the basmati rice for 30 minutes.

    Marinate the mutton with all the listed ingredients for 2-3 hours.

    Take a pressure cooker and heat 1 tbsps oil and add the marinated chicken and cook on high flame till the mutton releases water.

    Add a cup of water if required and pressure cook for 3-4 whistles.

    Allow to cool before opening the pressure cooker.

    For cooking the rice take a pan heat 1 tbsps ghee and add whole garam masalas, bay leaves sauté it, add 2 litre water, salt, give a stir.

    Once water comes to boil add the drained rice.

    Stir well and continue to cook on high flame for 7-8 minutes, turning it few times without breaking the rice.

    Now drain the rice and spread it on a big plate to cook down. (you can remove the whole garam masalas if you want).

    Take a heavy bottomed pan and first arrange the half of the cooked mutton. Spread half of the Rice on the top and spread half of the chopped coriander leaves and half of the fried onion.

    Now arrange the balance cooked mutton with the gray and spread balance rice on the top. Spread balance chopped coriander leaves and fried onion.

    Pour 1 tbsps of ghee on top.

    Pour the saffron soaked water and chopped coriander leaves on the top.

    Cover the lid and cook on low heat for 10 minutes.

    Allow to rest for 15 minutes. Open the cover and gently mix the layers of mutton and rice.

    Now our delicious mutton biryani is ready serve with raita.
