Rasmalai as the name suggests is a well known Indian Dessert in which soft and spongy balls are added to a thickened creamy Milk reduced gradually on a low heat. These divine little balls made with Milk powder look like White Pearls in a milky ocean bed. Melt in mouth cut balls are a perfect Dessert option for a weekend get together. It can liven up any party, be it a small or a big one. Best served chilled with lots of chopped Pistachios and Almonds.

Cooking Instructions

Bring milk to a rolling boil. Add sugar, crushed cardamom pods and saffron strands. Lower the heat now. Allow it to simmer for a few more minutes. Meanwhile add all the ingredients to a bowl for making rasmalai.

Mix well and add beaten egg little by little to make a smooth dough. Use milk afterwards as desired. Do not use more. Just a little to facilitate the whole process.
Refrigerate it for 10 minutes. Make small balls out of this dough. I could get around 13 to 14 medium sized balls. - 3
Flatten a bit and add it all to the simmering milk. Cover and cook for 10-12 minutes on a medium high heat. Spongy and fluffy Rasmalai is ready.

Serve it chilled with chopped Pistachios and Almonds.
