AF Parsnip Fries for 1

Confession: In 70+ years of life, I never ate a parsnip. 😳 As a foodie and a vegetable lover, don't know why that is. So I was excited to finally give them a try when they came up in the Cookpad challenge. Still, since it was something new, I just wanted a small amount to sample, and something simple and quick to prepare. This recipe fit that criteria, PLUS it included a seasoning blend I'd never even heard of: Dukkah.
These were very good! Even my sister, who's definitely NOT a veggie eater, loved them. My only "complaint" is they don't get crispy, and crispy is how I like my fries. But we'll for sure be trying more parsnip recipes in the future!
Cooking Instructions

Our grocery didn't carry Dukkah, so I ordered from Amazon.

Preheat air fryer to 400°F. Peel the parsnip and cut into fries. Toss with a little olive oil, and season with salt and pepper.

Place in a single layer in air fryer basket. Cooking time depends on the size/thickness of your fries. Mine took about 10 minutes to brown. During last 1-2 minutes of cooking, sprinkle with a liberal amount of Dukkah. Don't add any sooner or the Dukkah will burn. Enjoy!
