I have used Romaine Lettuce for this beautiful looking Soup. Any type of available variety of Lettuce can be used accordingly. A warm bowl of this flavourful Soup will definitely make your Iftaar mealtimes a delightful affair. Everyone would love it to the last sip. Use Cream as needed as well as the seasoning too. Use it as desired. The best part is that it can be adjusted. Children can be served with less of seasoning and adults can adjust it according to their taste and choice.

Ingredients

2 servings
  1. 1 bunchroughly torn Romaine Lettuce
  2. 2 tbspOlive Oil
  3. 1 tspSalt or to taste
  4. 1/2 tspRed Chilli flakes
  5. 1 tbspFresh Cream
  6. 2-3 cupsVegetable stock

Cooking Instructions

    Wash the lettuce leaves thoroughly removing each of it. Chop them roughly. Set aside.

    Meanwhile in a pan, saute onion and garlic Allow it to cook for about 2-3 minutes so that it gets soft and translucent. Saute roughly chopped lettuce now to get rid of it's raw smell for 2 minutes. Add vegetable stock and boil for 2-3 minutes. Let it cool.

    Season it with salt and pepper. Cool and blend it with the stock until a smooth puree is obtained.

    Adjust salt and pepper. I added some chilli flakes. Black Pepper can also be used. Bring it back to the heat and give it a final boil. Stir in some fresh cream.

    Serve it piping hot right away. Garnish with a little of dry parsley or basil flakes or just a plain swirl of cream. Enjoy! Have a blessed Iftaar Time.
