Mutton Rogan Josh is an authentic Kashmiri Mutton dish cooked with a spicy gravy flavoured with ginger, garlic and aromatic spices like clove, bay leaves, cardamom, and cinnamon, and in some versions browned onions also. Usually it is made with ginger powder and ghee, but I have used fresh ginger and mustard oil for bright colour and enhance the taste.

Ingredients

  1. 500 gMutton pieces
  2. 2Onions, thinly sliced
  3. 1Tomato
  4. 1Ginger, 2 inch piece
  5. 4-5Garlic cloves
  6. 2Green Chillies
  7. 2 tbspGhee or Oil
  8. 4Clove
  9. 2Green Cardamom
  10. 1Bay leaf
  11. 2Cinnamon sticks
  12. 3 tbspOil for frying onions
  13. 1 tspMeat masala powder
  14. 1 tspKashmiri Red Chilli powder
  15. 1/2 tspCoriander powder
  16. 1 tspSalt
  17. 1 tspFinely chopped Coriander leaves
  18. 1/3 tspTurmeric powder

Cooking Instructions

    Heat oil in a pan and deep fry sliced onion.

    Remove from oil and keep aside for grinding with other ingredients.

    Grind browned onion with green chilli, tomato, ginger and garlic into a fine paste.

    Wash mutton pieces well and strain.

    Heat mustard oil in a pressure cooker and put whole garam masala.

    Now put washed mutton pieces with 1/2 tsp salt, mix well and cook on low heat for 5-6 minutes.

    Now add grounded paste and mix well.

    Add powdered spices and 1/2 tsp salt and mix well. Cook on high heat for 2 minutes.

    Now add water, close the lid of pressure cooker and cook for 2 whistle.

    Open the lid, adjust the gravy and serve hot mutton rogan josh with plain rice.
