Oh the prefect dip for me. Yes, very easy to make and scrumptious.
Cooking Instructions

In a pan, heat the oil.

Add onions and sweat them a bit.

Add the puree and cook for 3-4 min.

Add salt, pepper and paprika.
- 5
Add the peppers and diced tomatoes.
- 6
Cook for 2 min.

Now add the sugar, vinegar and cucumber.

Cook for mere 30 sec.

Cover with a lid and keep aside to come to room temperature.

Once cooled, fill in jars and store in the fridge.

Don't keep it on to long or you will have Mexican flavored tomato sauce. My kids love this stuff! Double or triple recipe. Single batch makes approx 12 cups (6 pint size jarsyou need about an hour 3-12 hours in advance to prepare the tomaotoes. The salsa and canning take about 2 hours (longer if doubling or tripling the batch) And then add 1/2 an hour for cleanup. An assistant is strongly recommended. Lil_Momma -
