Ingredients

  1. 4egg whites
  2. 2/3 cupsugar
  3. 3 tbspgin
  4. 1 1/2 tsplime peel, grated
  5. 1/4 tspsalt
  6. 1/4 tspalmond extract
  7. 14 ozflaked coconut
  8. 1/2 cupall-purpose flour
  9. 8 ozwhite baking chocolate

Cooking Instructions

    Preheat oven to 350°.

    In a small bowl, whisk first 6 ingredients together.

    In a large bowl, toss coconut and flour together.

    Add egg white mixture to coconut mixture.

  5. 5

    Drop by tablespoons 2 inches apart onto greased baking sheets.

    Bake 15-18 minutes until tops begin to brown.

    Remove from pans to cooling racks and cool completely.

  8. 8

    Melt chocolate while cooling. Dip bottoms of cookies into melted chocolate and allow excess to drip off.

    Place on wax paper and let stand until set.
