Ingredients

4 servings
  1. 1 candiced fire-roasted tomatoes
  2. 4 tbsptomato paste
  3. 1/4 tspsalt
  4. 1 tsponion powder
  5. 1 tspgarlic powder
  6. 1 tbsporegano
  7. 4 clovesgarlic, minced
  8. 1/4yellow bell pepper, diced
  9. 1/4red bell pepper, diced
  10. 1/4green bell pepper, diced
  11. 1/4onoin, diced
  12. 1jalapeno, sliced
  13. 1plum tomato, de-seeded and diced
  14. 1/4 packagepepperoni
  15. 4Flatout flatbreads
  16. 1 cupshredded cheddar cheese
  17. 2 cupsshredded mozzarella cheese

Cooking Instructions

    Preheat oven to 400 F

  2. 2

    Mix spices, 1/8 cup diced onion, diced fire-roasted tomatoes, and tomato paste in a sauce pan.

    Heat over medium until bubbly, reduce heat and simmer until thickened ~10-15 min.

    While sauce is simmering, place flatbreads on cookie sheet and bake, without toppings, for 4-5 minutes.

    Spread 1/4 of the sauce mixture on each flatbread. Top each with 1/4 cup mozzarella and 1/4 cup cheddar cheese.

    Add pepperoni and all veggie toppings as desired. Top each with 1/4 cup mozzarella.

    Bake for ~6-8 minutes until crusts are browned and cheese it bubbly.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
