Chicken Shogayaki

Shogayaki (生姜焼き) is a popular Japanese comfort food using sliced pork (most commonly used) pan fried in a sweet and savory sauce with grated ginger. In this recipe I used chicken thighs that you eat along with a sweet savory gingery glazed sauce.

Combine all the sauce ingredients, and mix well. Set aside.

Chop the chicken into big bite-sized chunks.

Coat the meat with flour, then dust off any excess flour.

Oil in a large skillet over medium heat.

Add chicken in a single layer.

Cook until the bottom of the chicken turns lightly golden.

Flip the meat and cook for a few more minutes until golden.

Add onions and the sauce mix.

Cook and stir at times until the sauce thickens (1-2 mins).

Serve.

Coating the chicken in flour maintians moisture in the chicken to make it juicy and help the sauce thicken.
