Ingredients

Makes about 6 biscuits, 2 1/3 inches in diameter
  1. 3/4 cupcake flour (about 100 grams)
  2. 1 1/4 cupsbread flour (about 150 grams)
  3. 5 tablespoonsbutter (or margarine) (about 70 grams)
  4. 1 1/2 tablespoonsbaking powder
  5. 1 pinchsalt
  6. 1 teaspoonhoney
  7. 1/2 cupmilk (about 130 ml)
  8. 1 tablespoonor more milk for brushing

Cooking Instructions

  1. 1

Preheat the oven to 400°F (or 450°F for a convection oven). Put everything except the milk into a food processor and blend until crumbly.

  2. 2

Add the milk in 2-3 parts, stopping as soon as the dough comes together.

  3. 3

Turn the dough out onto a floured surface, roll it out to a thickness of 3/4 inch, and cut out shapes. Brush with milk. (For a speckled finish, mix a little flour with the milk.) *If it's warm, chill the dough in the fridge to prevent splitting.

  4. 4

Bake at 400°F for about 10-13 minutes, checking for color.

*In hot weather, chill all ingredients or let the dough rest in the fridge. The ideal thickness is over 3/4 inch.
