Preheat the oven to 400°F (or 450°F for a convection oven). Put everything except the milk into a food processor and blend until crumbly.

Add the milk in 2-3 parts, stopping as soon as the dough comes together.

Turn the dough out onto a floured surface, roll it out to a thickness of 3/4 inch, and cut out shapes. Brush with milk. (For a speckled finish, mix a little flour with the milk.) *If it's warm, chill the dough in the fridge to prevent splitting.

Bake at 400°F for about 10-13 minutes, checking for color.
*In hot weather, chill all ingredients or let the dough rest in the fridge. The ideal thickness is over 3/4 inch.
