Fast, refreshing and easy! What a great taste of summer this brings.
Cooking Instructions

Preheat oven to 350°F.

Once heated bake pie shell for 10 minutes. While this bakes, prepare filling.

In mixing bowl, mix sweetened condensed milk, eggs, lime juice and sugar. Mix well.

Once shell is ready, add in pie filling.

Bake an additional 15 minutes.

Let cool and refrigerate for 2-4 hours.

You may top with fresh whipped cream.

Here's a quick recipe. Take 2 1/2 cups very cold heavy cream, 1 teaspoon pure vanilla extract and 1/2 cup regular sugar. Beat cream and vanilla until it starts to become thick in volume. Slowly add sugar. Top cooled pie.

Nothing says summer like the light citrus flavor of key lime pie! As we are quickly blowing through the summer season it occurred to me, I had not made a key lime pie all season. With thirty minutes to spare and not a single key lime in the house... I pulled together this delicious, gorgeous pie. The meringue is optional but gives such an improvement to the look of an otherwise lifeless looking pie. Also, I do not use food coloring (what's in that stuff anyway) but if synthetic and complicated chemical names are your thing you can green your pie up as you see fit.
