Love meatloaf. This one is made of ground turkey and ground sweet Italian sausage, 1?pound each. I added onion, peas and carrots (thawed), 3 eggs, peeled and smashed garlic cloves, tomato paste. I formed the loaf on a sheet of parchment paper, then dropped it into a square glass baking dish. Cooking for an hour and forty-five minutes. Coated the top with low-sodium ketchup. Hoping for the best! The parchment paper will allow me to lift the loaf out, slice it as desired, then drop it back in. At least that’s my plan. Have a great weekend and meaningful Fourth of July.
