soooo yummy and creamy and filling! this is my first try at using leeks and I'm super excited about trying more now!! I did use chicken stock as it's all I had...I also only made half the recipe for my first time, but I'll absolutely be making this again..a full batch so I can freeze portions to have whenever. it's a very fast and very easy soup too! I added a splash of cream for an extra bit of creamy mouth feel. delicious! I just blended it in the soup pot with an immersion blender...worked great!! thanks as always Vicky for the help and advice!! (L)
