Curried Parsnip Soup

Ingredients

  1. 5medium size Parsnips
  2. 1Maris Piper potato
  3. 1medium size onion
  4. 2 clovesgarlic
  5. 1 tspcumin
  6. 1 tspthyme
  7. 2 tspmild curry powder
  8. 2 tablespoonscreme fraiche
  9. Chicken stock gel or cube of choice

Cooking Instructions

  1. 1

    Chop all veg. Sweat off onion in olive oil over medium heat till soft. Add garlic,thyme & powder.

  2. 2

    Chop parsnips & potato & cook for a further 5-10 mins

  3. 3

    Add enough hot water to cover veg. Add stock & cook till all veg is tender

  4. 4

    Blend add creme fraiche & season
